PUMPKIN OAT MUFFINS (no sugar added!)

I've always loved fall. I think it's because I'm a November baby, but every year when October rolls around I get SO EXCITED for pumpkin flavored anything. I love a good PSL and am always looking forward to pumpkin pies at Thanksgiving. (This year my birthday actually falls on Thanksgiving and all I want is one pie just for me - stay tuned!)

These pumpkin muffins are so easy and so yummy. They're the perfect mid-morning snack at work since they can travel easily. Plus, they are made with all natural ingredients and no added sugar! Talk about a pumpkin-flavored win.


Ingredients (makes 12 regular sized muffins and 24 mini muffins, serving size is 2 muffins or 4 mini muffins):
  • 1 cup gluten-free oats
  • 1 cup pumpkin puree
  • 1/4 cup unsweetened applesauce
  • 1/2 tbsp vanilla extract
  • 2 tbsp melted coconut oil
  • 1/4 cup unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • sprinkle of salt

Mix it together and use a 1/4 cup (or whatever you want, tbh) to scoop the mixture into the tray. Bake for 350 for 15 minutes or until "set."


I eat mine cold for my mid-morning snack at work (too lazy and hungry to heat them up honestly), but I bet these would be totally dreamy warmed up with a nice pumpkin spice latte. Or is that too much pumpkin? Is there even such a thing?!
