3 Ingredient Banana Protein Pancakes

I have been on the struggle bus recently when it comes to my diet. I'm a big breakfast person but generally get hungry way before lunch at 11:30-ish. And if I eat that early, then I'm hungry way before the end of the day! This leads to me snacking on unhealthy foods that leave me wondering why I spend time in the gym if it's not making a difference! 😉

I've been wanting to find a quick breakfast that keeps me full for a long time. Enter: simple banana pancakes.

I follow a lot of #fitspo accounts on Instagram, and it seems like all of them are obsessed with banana pancakes. I had some time on Saturday, so I decided to whip some up and try them myself. I was a little nervous, but pleasantly surprised! 

The best part of these pancakes is that you need 3 ingredients, 4 maximum. I also think that these would be so easy to mix up the night before, so that all you have to do in the morning is heat up your pan and get flippin'.

I was trying to be extra healthy so I greased my pan with coconut oil. Next time I make these, I'm going to switch back to using regular cooking spray. My first pancake turned out almost perfect, but the two after stuck to the pan and were harder to flip. I think a simple spray between each pancake would solve that problem!

I loooove peanut butter and banana together. It's a classic combo that has a ton of protein. (A breakfast I have a lot is peanut butter toast and banana on top! Yummy.) I heated up a spoonful while my last pancake was cooking and drizzled it on top. So good!! More liquefied almond or nut butter might have been easier, but YOLO. Regular peanut butter forever. ✌🏻

These kept me full for a long time on Saturday! After I ate them around 9:00, I watched TV for an hour, went to the gym, went to Walmart, got home around 1:30 and was still barely hungry for lunch.

  5. ahh i can't wait to make these! I love pancakes but haven't had them in forever because they have no nutritional value.. but these!! Pancakes are in my future again! haha
