Baked Chicken Fingers

Y'all, I love chicken fingers. They're a staple in my diet, especially when I go out to eat. Unfortunately, restaurant chicken fingers are so many calories! Don't get me wrong, I'll still splurge on them from time to time, but can't a girl enjoy her chicken fingers in peace while still feeling healthy at the end of the day? Enter: homemade baked chicken fingers.


These chicken fingers are an amazing alternative to the restaurant kind! Golden brown, crispy, super yummy... I mean they have it all. Not to mention, they're incredibly easy to make! You need just 5 ingredients and about 30 minutes and BOOM! You're ready to enjoy some delicious chicken fingers without feeling guilty.

I've tried this recipe a lot in my years, and I think I've finally perfected it. Two things here that really made a difference: first, be sure to lightly toast your breadcrumbs (preferably panko, but doesn't have to be or can be a mix of panko + regular breadcrumbs) in the oven or on the stove for 3-4 minutes until they're nice and golden brown. This seriously helps with the golden brown color, or else they will just turn out kind of white-ish yellow. Second, putting them on a baking rack on your tray instead of directly on the baking sheet helps them back more evenly. If you don't do this, they'll be crispier up top and soggy on the bottom.

Ahhh that's much better! See what a difference the toasted breadcrumbs make? Not to mention I didn't burn them this time ;)

This recipe is for parmesan chicken fingers, but you could easily mix in whatever spices you want to the breadcrumbs! I plan on trying buffalo chicken fingers next, by swapping out one egg in the batter with buffalo sauce. If you try something funky, let me know! In the mean time... enjoy!

  16. These look soooo good! My bf and I make homemade chicken fingers all the time but we've never tried a recipe like this. We usually make them low-carb and use almond flour!
